Healthy Meals:: Brussels Sprouts with Eggs

It all began a few days ago when I posted a photo of my dinner that I had just cooked.  I kept getting comments on my Facebook, Instagram and Twitter asking for the recipe so I decided I would share.  I have been on a brussels sprouts kick lately.  I can’t seem to get enough.  I’m always looking for new ways to cook them, so when I stumbled across this recipe on Pinterest I had to try myself.  Besides being absolutely delicious, they are a great way to get your greens.   Perfect for my New Years resolution: to be healthy from the inside out.

I love this recipe because it has only a few ingredients and is all cooked in the same pan.  Does it get any better?   

12 ounces Brussels sprouts
2 slices thick-sliced bacon 
2 cloves garlic, minced
2 shallots, minced (I used green onions instead)
1 1/2 tablespoons apple cider vinegar
1 tablespoon butter
3 large eggs
kosher salt
cracked black pepper

Thinly slice Brussels sprouts. Set aside. In a medium to large skillet over medium heat, cook bacon until crisp. Remove from pan.

To the bacon grease add the garlic and shallots and cook for 30 seconds before adding in the Brussels sprouts. Stir in the apple cider vinegar. Sauté for 5 minutes until sprouts are tender. Add the bacon back in, and stir to combine and cook until sprouts start to brown on the edges, another 3-5 minutes. 

Create a slight well in the center of the pan. Add the butter if desired. Crack the eggs directly in the center and cook until the eggs are cooked through as desired. Remove from heat and serve immediately.

Make sure to slice the brussels sprouts nice and thin.

I love having all of my ingredients ready to go before I start cooking.

 For a healthy option use turkey bacon instead.
